It’s been a while since I posted a recipe and I want to return to my experiments on different breakfasts I can take to work, reheat quickly, to save money, time, and hopefully some calories. Since we have an abundance of eggs (mostly duck since I found an outlet for my chicken eggs finally), I tend to take egg dishes of some kind for breakfast. In this one, add half a dozen sausage links, and I have breakfasts for a week.

Put in fridge as soon as you’re done cooking. Reheat for 60-90 seconds. Tada!

Instructions
  1. 1. Heat electric skillet (or stove top skillet) and begin cooking sausage links 2. Crack eggs into a bowl, beat with milk. 3. When links are roughly 3/4 the way cooked pour the eggs over them. Add any other toppings like diced onions, mushrooms, etc. 4. When the bottom of the eggs are cooked solid, flip the sausage links and eggs to make mini "pancakes". Add cheese and cook the rest of the way.
