Zucchini Pancakes
This easy three ingredient side dish is a quick way to use up zucchini as well as introduce it to your family in a new way.
Ingredients
- 1 to 1 1/2 cups shredded zucchini
- 1/4 to 1/3 cups bread crumbs I used ones seasoned with Italian seasoning
- 2 eggs I used duck eggs, and you can also reduce the eggs to 1 if you like.
- black pepper
- 2 TBS oil Or you can omit the oil and cook these at the same time as your main dish like pork chops/hamburgers.

Instructions
1. Mix the zucchini, bread crumbs and eggs in a bowl until thoroughly mixed. Add black pepper to taste. Usually a pinch or two.
2. Form into a palm-sized pancake. Put in a hot skillet. 3. Cook until brown on one side. Turn and cook until brown on the other side.
4. Serve warm.
