I harvested our very first zucchini from the garden this past week and while I was thinking of simply thinly slicing it and sauteing it in butter to go along with our center cut pork chops for dinner, I decided to experiment a little.
I won’t lie. When I offered dinner to my husband he looked at them like “what are you feeding me?”, especially when I told him they were zucchini pancakes. But, he pronounced them as far more delicious than he thought they’d be and said he’d love it if we had them again. That’s good, because tonight, I’m going to take whatever zucchini I have left over from making some zucchini bread and add the rest of the summer squash I shredded into a casserole earlier this week (hooray for the garden) and make zucchini/squash pancakes for dinner tonight. I’ll let you know how they go.
The nice thing about these is that you can substitute other vegetables. Try zucchini carrot pancakes or zucchini potato pancakes. You can’t go wrong with zucchini. (Can you tell, it’s one of my favorite vegetables?)

Zucchini Pancakes
This easy three ingredient side dish is a quick way to use up zucchini as well as introduce it to your family in a new way.
Ingredients
- 1 to 1 1/2 cups shredded zucchini
- 1/4 to 1/3 cups bread crumbs I used ones seasoned with Italian seasoning
- 2 eggs I used duck eggs, and you can also reduce the eggs to 1 if you like.
- black pepper
- 2 TBS oil Or you can omit the oil and cook these at the same time as your main dish like pork chops/hamburgers.

Instructions
1. Mix the zucchini, bread crumbs and eggs in a bowl until thoroughly mixed. Add black pepper to taste. Usually a pinch or two.
2. Form into a palm-sized pancake. Put in a hot skillet. 3. Cook until brown on one side. Turn and cook until brown on the other side.
4. Serve warm.
