Mexican food is one of my comfort foods, and while we have tacos every Tuesday (I’m predictable, LOL), I wanted something else to add to my meal rotation. I mixed these up and loved how filling, and how good, they are. I hope you enjoy.

2 Bean Burritos
An easy to make burrito that is cheap on the budget and filling for your stomach!
Instructions
Spray 9x13 baking dish with nonstick spray Preheat your oven to 350.
In a sauce pan, dump the refried beans, rotel, black, and pinto beans. Mix until the refried beans are smooth and everything is well mixed. Add in the packet of taco seasoning. Can include about 1/2 cup water if you feel that it needs more liquid. Stir until seasoning is dissolved through.
In one tortilla scoop two cooking spoons (probably 1/4 cup if you're a measuring person) into the tortilla. Fold in the ends. Fold in one side. Fold the other side over. Lay in the pan. Complete until you have all 6 tortillas filled.
Pour the enchilada sauce over your burritos. Then spread the cheese over the top. Cook in a 350 degree oven for about 15-20 minutes until the cheese is well melted and the edges of the tortillas are starting to crisp.
Can serve with sour cream or cilantro for garnish.
