This recipe came about because I wasn’t feeling well New Year’s Day and didn’t want to follow the recipe that I had printed off for this dish, which is supposed to bring you good luck. Enjoy!

  1. 1. Rinse the blackeyed peas, then put in a large pot with 4-6 quarts water. Bring to a boil and boil for an hour. Rinse and drain. Set aside. 2. About two hours before you're ready to serve, rinse the blackeyed peas again and bring to a rolling boil. After one hour, drain and rinse, then bring to a boil again and this time add the bacon, salt and pepper to taste, and the onion. Cook for 60-90 minutes.
